Meat Lovers Chili
This is not your typical run of the mill chili. It is filled with two different types of meat making each bite hearty and full of meat. The smoked sausage in my recipe is a big part of what sets it apart. I have made this specific recipe for numerous gatherings and parties and I am always so excited by the reaction that I receive. I have been told time and time again that this is a winner recipe and I am so excited to share it!
I start off by prepping my meats and veggies. I brown the ground beef and put it into the pot or crockpot (crockpot is best on days when you have 4-5 hours to spare before dinner time). I then chop my green pepper and smoked sausage and transfer into the pot. As you can see below instead of cutting it into coins I actually cut it into quarters (to reduce choking hazard for my littles). After chopping everything up it is just a matter of throwing everything else in to simmer. Easy right?!
Once I have the beans, diced tomatoes, tomato juice and tomato sauce in the pot I will turn on the heat to medium. I add the onion powder, garlic powder, parsley, chili powder, sugar, oregano, salt, pepper, and diced jalapeno (mine are pre-diced in a jar but obviously you could do fresh or none at all if you don’t like it spicy.
Stir everything together and allow it to simmer for at least 25-30 mins. The longer the better with something like this to allow all of the flavors to marinate. If you are planning to use a crockpot instead everything will stay the same except you put in the crockpot on low for 4-5 hours and then will be ready to serve.
The toppings are something that you are not going to want to skip. I add a dollop of sour cream (this makes the chili so creamy and amazing) I of course add shredded colby & monterey jack cheese.
