This Beef Cajun Pasta is a family favorite. It is one that my husband and children get excited for every time that I make it. The flavors in this are amazing. This was a recipe that I put together when I was trying to recreate a meal that I had downtown Louisville at Troll Pub Under the Bridge. 

The magic of this dish is all in the sauce. You could substitute the meat for chicken, shrimp or go meatless if you wanted.  When it comes to the pasta that I use I usually go with what is in the pantry which is oftentimes penne but really any pasta will work. I absolutely love this meal because you can whip up in under 30 mins. Another thing that I love is how I can make it for under $10 and it can feed 8-10 people. A time and money saver recipe that everyone loves is something that you just cannot beat!

First I chop up the meat and brown in the skillet for a couple of minutes. As you can see below instead of cutting it into coins I actually cut it into quarters (to reduce choking hazard for my littles). Once the meat is browned I will pat it down with a paper towel to reduce the grease.

I will then mix the meat, cream, tomatoes and all of the seasonings into the skillet on medium low and allow it to simmer.  I will let it simmer between 20-30 mins to let everything marinate and thicken. While the sauce is simmering I will bring my pot of water to a boil add salt and pasta and cook until tender using the time listed on the box.  Once I have drained the pasta I combine the pasta and sauce in a dish.

Lastly, I add my Parmesan cheese (fresh is amazing but the kind in the jar works too) and then mix it all together. The full recipe is listed below. This pasta pairs nicely with garlic bread as well.  12 oz packs of Beef Skinless Smoked Sausage
 12 oz pasta of your choice (I usually use penne or linguine)
 2 tsp Cajun seasoning
 16 oz heavy whipping cream
 16.50 oz cans of Italian diced tomatoes
  tsp salt
  tsp pepper
  tsp garlic powder
  tsp basil
 grated Parmesan to taste (fresh is best)

Chop meat and add to a large high sided skillet over medium heat. Once meat has browned remove from the skillet to pat down with a paper towel.

Add the meat, cream, tomatoes and all of the seasonings into the skillet on medium heat and bring to a boil and then reduce to simmer. Let it simmer between 20-30 mins to let everything marinate and thicken.

Bring a pot of water to a boil add salt and pasta and cook until tender using the time listed on the box. Drain pasta and transfer to serving dish

Combine the pasta and sauce in the dish and add the desired amount of parmesan cheese. Stir until everything is evenly distributed
