Protein Bites

These protein bites are a lifesaver every morning when I am running around trying to get everyone ready and out of the door. They are easy to grab and eat while I am packing lunches or getting the kids dressed. I am really not the type of person to enjoy eating the same thing everyday (unless it’s pizza or chocolate) but these are so yummy that it does not bother me at all. These are filled with fiber and protein to provide a boost of energy to start the day. When I pair these with a smoothie and water I feel unstoppable. 

Also a huge plus is that the kids love these! They are a great healthy alternative to the typical granola bar that is full of sugar. When we all need to grab a snack as we are walking out the door these are great for the whole family. 

I will usually make a batch every Sunday and it will last all week which makes for less stressful mornings. Or a lot of time I will actually triple my recipe (I know I skipped double but triple just makes more sense with the measurements and it allows me to use less dishes which is always great!

It is so easy, just throw all of the ingredients in a container and mix it together. I usually start with all of the dry ingredients and then the wet ingredients. I try to put the vanilla on top of the honey because it helps me distribute it evenly without it soaking into the dry ingredients. Once everything is all mixed together I will separate them into bite sized balls when I have time. If you don’t feel like making balls that is perfectly fine. Sometimes I just leave it as one big chunk and spoon out bite sizes each morning (less prep time but just a little bit messier.

 1 cup Oatmeal
  cup Honey
 ½ cup Peanut Butter
 ½ cup Chocolate Chips
 ½ cup Ground Flax Seeds
 1 tbsp Ground Chia Seeds
 1 tsp Vanilla Extract

Add quick oats, chocolate chips, chia seeds, and flax seeds

Next add peanut butter, honey and vanilla on top of the honey to help with vanilla distribution

mix everything together until evenly distributed. Shape into 1-2 inch balls and store in a sealed container. I prefer mine to be stored in the refrigerator as it makes them less messy and sticky and gives the chocolate chips a nice crunch.
